Looking for something new for breakfast?
White chia seeds lend a gelatinous, tapioca-like quality to this satisfying breakfast pudding. It takes only minutes to prepare but needs 30 minutes for the chia to soften and expand. I often throw all of the ingredients into a sealed container and then simply stir it to enjoy after the gym.
Makes 4 servings
-1/2 cup white chia seeds
-1 cup raw cashews
-1 1/2 cups water
-1 banana peeled and broken into pieces
-2 tbsp. honey
-1 tsp. ground cinnamon
-1 tsp. pure vanilla extract
-pinch of salt
-a handful of fresh or frozen berries to garnish
In a blender combine cashews, water, banana, honey, cinnamon, vanilla and salt until very smooth. Pour into a medium sized bowl and stir in the chia seeds. Allow to sit for 20-30 minutes until the chia seeds are soft and plump. Serve topped with fresh berries or fruit of choice.
