Chia Limeade

With summer approaching, here is a thirst-quenching way to consume the mighty chia seed! This tiny seed, native to Mexico, is an excellent source of omega-3 fatty acids, protein, minerals, antioxidants and fibre. Chia Fresca is traditionally sweetened with copious amounts of white sugar. I have substituted stevia to create a nutritious and virtually calorie-free drink!

Ingredients

  • 1 Tbsp white chia seeds
  • 3/4 cup freshly squeezed lime juice (juice of about 8 limes)
  • 1/4 tsp (plus) white stevia powder
  • A sprig of fresh mint to garnish

Directions

Whisk 1 Tbsp of white chia seeds into a pitcher filled with 3 cups of cold water. Allow to sit for 15 minutes or until the seeds have plumped up to resemble tapioca pearls. Stir in the lime juice and the stevia.

Add stevia at this point a scoop at a time (with the tiny scoop provided in the bottle) to your likeness!

Be careful as stevia is very sweet!

Stir well before pouring to distribute the chia evenly. Serve over ice with a sprig of fresh mint.
