5 cups of organic slow cooking rolled oats

1 cup of unsweetened organic coconut

Pinch of sea salt

1 tsp. ground cinnamon

1 cup of whole raw almonds

½ cup organic raw pumpkin seeds

½ cup organic raw sunflower seeds

½ cup coconut butter or grapeseed oil

½ cup of agave syrup

1 tsp. pure vanilla extract

1 cup dried organic, unsulphured fruit ( cherries, cranberries, mango etc.)

½ cup raw hemp seeds (add at the end as they are more nutritious raw)

Directions

Preheat your oven to 250F.

Combine oats, coconut, sea salt, cinnamon, almonds, pumpkin seeds, and sunflower seeds in a large bowl. Combine coconut butter or grapeseed oil and agave syrup in a measuring cup. Stir to combine and then mix well into the oat mixture to coat.

Spread onto a large cookie sheet and then bake in preheated oven for 40 minutes. Stir two or three times throughout to prevent from burning. Oats will be lightly toasted.

Remove from the oven and then stir in the dried fruit and hemp seeds.

Allow to cool completely before storing in an airtight container.

Whenever possible, Mystee embraces the outdoors. In her native Banff she’s often spotted with husband Rick and two grown sons enjoying her favorite sports of hiking, skiing, cycling and supping. Her love of yoga and passion for cooking are the things that bring her indoors with a smile. In summer months, Mystee can be found at the Banff Farmer’s Market keeping Banffites cool with her “Om Cooking” gourmet popsicles.
