This is our most popular early summer popsicle at the Banff Farmers Market! Rhubarb grows abundantly in gardens and alley ways around town but if you can’t find any you can usually buy it fresh or frozen at your local grocery store.

— 1/4 cup organic sugar
— 1/4 cup water
— 1 vanilla bean or 1 tsp. vanilla extract
— 1 cup chopped rhubarb
— 1/2 cup chopped organic strawberries
Combine rhubarb, with sugar, water, and vanilla in a medium sized saucepan. Bring to a boil and then simmer until rhubarb is soft. Purée and set aside.
Evenly distribute chopped strawberries between four popsicle moulds.
Pour the rhubarb purée over top to fill the moulds.
