This cereal goes together quickly if you remember to soak your buckwheat groats the night before! Buckwheat is a complete protein, and along with all of the other nutritious ingredients, makes for a satisfying breakfast. You can even add a scoop of your favourite protein powder to the mix. I like Vanilla Sunwarrior sprouted brown rice protein powder. It is sweetened with stevia and will eliminate the addition of added sweetener in this recipe. When heading out, I like to pack mine along in a mason jar with freshly made nut milk poured over top.
~ 1 cup raw buckwheat groats soaked overnight and strained and rinsed in the morning
~ 1 cup dried organic coconut flakes
~ 1 cup raw hazelnuts ( they are my favourite but you can use any nut or seed)
~ 1/2 cup dried cherries (or any other dried fruit)
~ 2 tbsp raw honey or maple syrup
~ 1 tbsp raw cacao powder
~ 1 tbsp maca powder
Combine all ingredients in a medium sized bowl. Enjoy with your favourite nut milk. This keeps well covered in the fridge for up to three days.
