The Naked Strawberry Popsicle

Manna Momma have been cooling Banff off at the Banff Farmer’s Market each week with delicious popsicles. And while they already created a delicious Strawberry Balsamic variation on this popsicle (that they named “The Highline”), they also got requests for a “naked” version. Here it is! – Highline

Makes about 10 popsicles.


-4 cups hulled strawberries (@ 2 cups puree)
-3/4 cup simple syrup
-2 Tbsp freshly squeezed lime juice
-simple syrup – makes one cup (2/3 cup sugar, 2/3 cup water)


Heat simple syrup in a pot on medium heat until the sugar dissolves.

Puree berries. Add syrup and lime juice. Pour into ice pop molds leaving a bit of room at the top for expansion. For added strawberriness, chop some fresh strawberries and spoon them into the mold before adding the pureed mixture.
