Watermelon Mint Slushie

We are loving this slushie treat for a warm summer’s day. Where are you sipping (slurping) yours? 

I always have fresh frozen watermelon in the freezer in the summer so that this drink is readily available. It can either be puréed in a blender or food processor without any additional liquid to create a sorbet or with a little added water or coconut water to give it more of a slushy consistency. Fresh ginger is also a refreshing addition.

Ingredients

  • 1 of those lovely little seedless watermelons, cut into 1 inch chunks, frozen
  • juice of one lime
  • 1/4 cup fresh mint
  • 1 tbsp. raw honey
  • 1 tsp. fresh finely grated ginger (opt.)

Directions

Purée enough frozen watermelon to make four cups with the rest of the ingredients, adding either water or coconut water if desired to make it a slushy, pourable drink.

Garnish with a sprig of fresh mint before serving.
